Vineyard
The biologically farmed Syme on Yarra Vineyard is located on the Gruyere – Seville East border in Victoria. The ‘Glory’ part of the vineyard located in Seville East was planted in 1998 to shiraz, on its own rootstock. It sits about 100m above sea level on a very slight south-west facing slope. With a clay loam top soil, it is supported by heavy clay subsoil.
Process
Hand picked and sorted, mainly destemmed fruit with 40% whole bunches. Gentle pumping over initially with an ambient yeast ferment and 35 days on skins. Hand plunged. Pressed off to a mixture of old oak and one new French 300L barrel. No added sulphur and only 40ppm at bottling. Bottled unfined & unfiltered July 2016.
