Vineyard
The Willowlake vineyard is located in the Upper-Yarra sub-region of Gladysdale, much cooler than the valley floor and receives high levels of solar radiation. The chardonnay, planted on its own rootstock, sits about 250m above sea level on friable clay loam volcanic soils.
Process
Hand picked and sorted, whole bunch press for a majority of the fruit with a portion set aside for skin contact. Ambient yeast ferment and 8 months in seasoned puncheons and 1200L foudre, with no batonnage. Settled in tank before bottling.
