Vineyard
The highly regarded Tibooburra Vineyard is located on a hill in the south-eastern central part of the Yarra Valley, Victoria. The ‘Yellingbo’ part of the vineyard was planted in 2001 to shiraz, on its own rootstock. It sits about 240m above sea level on a south-west facing slope. With a black top soil, it is supported by yellow duplex subsoil.
Process
Hand picked and sorted, mainly destemmed fruit with 30% whole bunches. Gentle pumping over initially with an ambient yeast ferment and 37 days on skins. Hand plunged. Pressed off to a mixture of old oak and one new French 300L barrel. No added sulphur and only 40ppm at bottling. Bottled unfined & unfiltered July 2015.
