Vineyard
The highly regarded Tibooburra Vineyard is located in the south-eastern central part of the Yarra Valley, Victoria. The ‘Yellingbo’ part of the vineyard was planted in 2001 to shiraz, on its own rootstock. It sits about 240m above sea level on a south-west facing slope. With a black top soil, it is supported by yellow duplex subsoil.
Process
Hand picked and sorted, destemmed fruit fermented separately to whole bunches (55%). Gentle pumping over initially with an ambient yeast ferment and approximately 30 days on skins. Hand plunged. Pressed off to seasoned oak. Bottled unfined & unfiltered August 2023.
