Vineyard
The Swallowfield vineyard is located in the Upper-Yarra sub-region of Gembrook, much cooler than the valley floor. The chardonnay, planted in 2000 on its own rootstock, sits about 280m above sea level on a slight north facing slope, with a quartz inflected red soil profile.
Process
Hand picked and sorted, whole bunch press for a majority of the fruit with a portion set aside for skin contact. Ambient yeast ferment and 10 months in seasoned puncheons, with no batonnage. Settled in tank for three months before bottling.
