Vineyard
The Swallowfield vineyard is located in the Upper Yarra sub-region of Gembrook, much cooler than the valley floor. The pinot noir, planted in 1990 on its own rootstock, sits about 280m above sea level on a slight north facing slope, with a quartz inflected red soil profile.
Process
Hand picked and sorted, destemmed fruit left on skins for 14 days with about 5% whole bunches. Ambient yeast ferment and racked to barrel for 10 months in seasoned oak. Settled in tank for two months before bottling. Neither fined nor filtered.
